Two Real Simple Eggplant recipes

Eggplant or Aubergines or Mela insana(as the Italians call it) has been one of my favorite vegetables of late. I have been trying different versions and have simply loved how the recipes turned out. Spaghetti mela insana

Spaghetti mela insana

INGREDIENTS

Spaghetti 8 ounces
Chopped spring onions 2-3
Garlic minced , 3 cloves
Tomato puree
Olive oil 2 tbsp
Eggplant, round sliced, 3-4
Black pepper, 1 tsp
Red chilli flakes, 1/4 tsp
Basil 1/2 tsp
Salt to taste
Grated Parmesan 2 tbsp

METHOD

  • In a large pan of boiling salted water, cook Spaghetti (according to package instruction) and drain well later
  • While the Spaghetti is being cooked, in a pan heat olive oil, add garlic and spring onions
  • Once the onions and garlic are slightly golden brown, add eggplant and saute till the eggplant it cooked well and turns slightly golden brown and soft
  • Now add tomato puree and mix well, cook for 2 mins then add salt, pepper, basil and red chilli flakes(add a little bit of water if needed)
  • Add spaghetti to the eggplant gravy and serve hot! Garnish with grated Parmesan

Roasted Eggplant

INGREDIENTS

Garlic minced , 3 cloves
Olive oil 21/2 tbsp
Eggplant, round sliced, 3-4
Black pepper, 1 tsp
Red chilli powder, 1/4 tsp
Salt to taste

METHOD

  • In a large pan heat olive oil, add minced garlic, once they are slightly golden add red chilli powder
  • Now place slices of eggplant and roast well till golden-brown
  • Once the they are slightly golden brown and soft add salt and pepper
  • Roast it for 2 mins more then serve hot with garlic bread or Indian bread!
