The Baked Love this Valentine!

The baked loveIt’s February! The month of love. It’s a good time to start loving your body and eating healthy. I have started eating baked recipes and salads recently, it’s helped me experiment more with food  and create tasteful low-fat recipes. In this post I am sharing 3 different cuisines – Indian, Chinese and Mediterranean. The first two are baked recipes and the last one is a salad. You can incorporate these in this week’s menu & get healthy by the 14th 🙂


Baked Cauliflower


Cauliflower Florets 1-2 cups
Minced garlic 2-3 cloves
Cumin Powder 1 teaspoon
Chaat Masala 1/2 teaspoon
Grated Ginger 1/2 teaspoon(optional)
Black pepper powder 1/2 teaspoon
Olive oil for greasing
Salt to taste


  • Pre-heat oven to 400°F. In a baking tray place foil and grease it with olive oil. Keep aside.
  • Mix all the ingredients together – garlic, cumin powder, chaat masala, ginger, black pepper, salt and 3-4 drops of olive oil.
  • Place the florets on the greased foil and place it in the oven. Bake it for 20-25 minutes.

Serve Crisp!

Shezuan Chicken

Baked Schezuan Sesame Chicken


Boneless Chicken pieces 1 bowl
Schezwan Spicy™ Stir-fry Sauce 3 tablespoons
Spring Onions chopped 1/2 cup
Minced Garlic 2-3 cloves
Honey 1 teaspoon
Black Pepper 1/2 teaspoon
Vinegar 1 teaspoon
Olive Oil for greasing
Water 2 tablespoons
Sesame seeds for garnish


  • Pre-heat oven to 400°F. In a baking tray place foil and grease it with olive oil. Keep aside.
  • In a bowl mix schezwan sauce, water, garlic, spring onions(keep a 1 tablespoon aside), black pepper powder, honey, vinegar, salt well. (Keep 1 tablespoon of the mix aside.)
  • Add chicken pieces to the rest of the mix, blend well with a spoon.
  • Now place the chicken pieces onto the greased tray, garnish with sesame seeds and bake it for 20 minutes.
  • Once done, add the baked chicken pieces to the Schezwan sauce mix that was kept aside, microwave it for 1 minute.
  • Stir well garnish with onions.

Serve with steamed rice!

Alternatively you can also make your own Schezwan sauce at home:
In a saucepan, heat 1 cup water add soy sauce, corn starch, sugar or honey, red chili powder or chili flakes, vinegar,minced garlic,  ground black pepper and heat it for 2-3 mins. Keep stirring frequently, once the sauce bubbles and becomes thick turn off the heat.
The sauce is ready!


Mediterranean Salad


Chickpeas (boiled washed and pressure cooked till soft)
Romanian salad leaves 1 bowl
Chopped cucumber 1/2 cup
Chopped tomatoes 1
Grated feta cheese or any cheese 2 tbsp
Lemon juice
Black pepper powder
Dry Basil leaves 1/4 tsp
Salt to taste


Once you have prepared Chickpeas (boiled, washed and pressure cooked till soft), throw away the remaining water.

In a bowl mix together Romanian salad leaves, the Chickpeas, chopped cucumber & tomatoes. Add lemon juice and mix well.

Add the grated feta cheese, salt, pepper and basil, toss well.

Serve fresh!
