Tomato Soup with herbs and bread crumbs 

INGREDIENTS NEEDED

Tomato puree 2 cups (made from 4-5 peeled tomatoes)
Onion(thinly chopped) 1
Garlic cloves 2-3
Black pepper 1/2 tsp
Salt to taste
Olive oil 1 tsp or Butter 1/2 tsp
Cornflour 2 tbsp
Oregano or mixed herbs 1/2 tsp
Water 4-5 cups
Coriander & grated cheese for garnishing

METHOD

  • In a deep pan, heat olive oil or butter and saute chopped onions and garlic till light golden brown
  • Once onions are done add pepper, salt, oregano or mixed herbs
  • Add tomato puree and water, mix well
  • In a cup mix cornflour in 1/2 cup water, stir well and add to the above mentioned step
  • Let the soup come to a boil, then cover with a lid for 5 minutes
  • Meanwhile for the breadcrumbs, either toast or heat a slice of wholewheat bread over the gas. Once the slice is crisp divide it into small cubes and keep aside
  • Once the soup is well heated and ready to serve, add bread crumbs and garnish it with coriander & grated cheese

Serve hot!

Chicken and Mixed Vegetable Lemon Soup

INGREDIENTS NEEDED

Boiled Chicken 1/2 cup
Onion(thinly sliced) 1
Garlic cloves 2-3
French Beans 7-8 sticks chopped
Carrots 2 coarsely chopped
Broccoli  1/2 florets separated
Lemon juice 2-3 tsp (1 lemon)
Black pepper 1/2 tsp
Salt to taste
Olive oil 1 1/2 tsp or Butter 1 tsp
Chicken Stock 4 cups

METHOD

  • In a deep pan, heat olive oil or butter and saute sliced onions,once light brown add beans, carrots, broccoli, garlic and saute-then add boiled chicken
  • Once the veggies and chicken are sauteed add pepper, salt and stir
  • Add chicken stock and mix well
  • Let the soup come to a boil, then add lemon juice and cover with a lid for 3-4 minutes
  • Once the soup is well heated and a bit thick – Serve hot!

Sweet Corn Chicken Soup

Sweet Corn Chicken Soup

INGREDIENTS NEEDED

Boiled Chicken 1/2 cup
Chicken Stock 4 cups
Egg white 1/2 cup
Onion(thinly sliced) 1
Garlic cloves 2-3
Sweet Corn 1 cup (thawed)
Black pepper 1/2 tsp
Salt to taste
Olive oil 1 1/2 tsp or Butter 1 tsp

METHOD

  • In a deep pan, heat olive oil or butter and saute sliced onions and chopped garlic,once light brown add sweet corns
  • Once the corn is soft add chicken, pepper, salt and saute
  • Add chicken stock and mix well
  • When the liquid is slightly heated add egg white while continuously stirring with the other hand-to avoid formation of lumps
  • Let the soup come to a boil, keep stirring in between cover with a lid for 3 minutes
  • Once the soup is well heated it’s ready, garnish with coriander
